Quinoa Salad with Chickpeas, Feta and Apples
Using quinoa with chickpeas, feta and apples is a refreshing salad idea perfect for on the go lunches in the office or out and about.
Suitable for vegetarians
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Red & White Quinoa
- 30g cranberries
- 400g chickpeas, rinsed and drained
- 4 stalks of flat-leaf parsley, chopped
- 150g crumbled feta
- 1 apple, chopped
- 60g toasted walnuts
- 1 tbsp Extra Virgin olive oil
- 1 tbsp lemon juice
- 1 tsp runny honey
- Salt and pepper
1.Heat the quinoa as per packet’s instructions. Pour in a large salad bowl, add the cranberries and set aside to cool.
2.Add the chickpeas, parsley, feta and apple. Season with olive oil, lemon juice, honey, salt and pepper. Sprinkle with toasted walnuts right before serving.
