Quinoa Tricolore Salad
Lots of colour, lots of flavour! Knock this fresh salad up in no time for a nutritious lunch or light dinner.
Suitable for dairy-free, gluten-free, vegans and vegetarians
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Red & White Quinoa
- 4 large tomatoes, chopped small
- 1/2 cucumber, chopped
- 4-5 spring onions, chopped
- 200g sweetcorn
- 1 yellow pepper
- Extra Virgin olive oil
- Salt and pepper
1.Heat the quinoa as per packet’s instructions. In a large salad bowl, mix the quinoa with the tomatoes, cucumber, spring onions and sweet corn. Season with olive oil, salt and pepper.
