Roasted Carrot and Wheatberry Salad

Try out this sweeter salad with roasted carrot!

Ingredients
- 125g of Merchant Gourmet Simply Cooked Wheatberries (half a pouch)
- 4 handfuls of rocket
- 2 medium carrots, cut in to chunks
- 1 tbsp olive oil
- Seeds from half a pomegranate
- 1 tbsp olive oil
- Juice of 1 lemon
- 1 tbsp wholegrain mustard
- A pinch of sea salt and black pepper
Instructions
1.In a bowl, mix together the carrot and 1 tbsp olive oil and put on a baking tray in a preheated oven at 190C for 30 minutes
2. In a small bowl, mix together 1 tbsp of olive oil, lemon juice, whole grain mustard and salt and pepper
3. Divide the rocket and lettuce between 2 plates and top with the Merchant Gourmet Wheatberries, carrot, pomegranate and drizzle the dressing on top
