Tomato & Lentil Soup
Soups are a wonderful way to warm up in winter but often don’t fill you up. This chunky Tomato & Lentil soup is packed with fibre to see you through to dinner.
Suitable for dairy-free, gluten-free, vegans and vegetarians
- 1 x pouch of Merchant Gourmet Tomatoey French Puy & Green Lentils
- 1 white onion
- 2 clove of garlic
- 1 litre of vegetable stock
- 1 can of chopped plum tomatoes
- 1 handful of finely chopped fresh basil
- 2 tbsp. of paprika
- 1 tsp. of turmeric
- 1 tsp. of chilli powder
- Pinch salt & pepper

1.Heat the olive oil in a large pan on a mid to low heat. Add the chopped onions and cook until translucent.
2.Add the chopped garlic and cook for a further two minutes stirring occasionally. Then add the turmeric, chilli powder, paprika, lentils, vegetable stock and can of tomatoes.
3.Stir, cover with a lid, reduce to a low heat and simmer for 10 minutes, stirring occasionally.
4.Add the handful of chopped basil and stir through. Then serve.
