Vegetable Tagine with Glorious Grains

Glorious Grains with Red Rice & Quinoa

Ingredients

  • 1 x 250g pouch of Merchant Gourmet Simply Cooked Glorious Grains
  • 1 red onion
  • 3 tomatoes
  • 1 carrot
  • 3 garlic cloves
  • 1 leek
  • 1 courgette
  • 1 chilli
  • 1 aubergine
  • 1 green pepper
  • 1 red pepper
  • 2 baby sweet corn
  • 1.5 pints of vegetable stock
  • 3 tbsp harissa paste
  • 1.5 teaspoon ground cinnamon
  • 2 tsp ground ginger
  • olive oil
  • salt and pepper
  • a handful of dried apricots
  • mint
  • rose petals
  • lemon

Instructions

1.Heat some oil in large pot, chop all your vegetable into large chunks (including the chilli) and add all them all to the pot along with the harissa paste, cinnamon, ginger, salt & pepper to taste & allow to cook for 10 minutes with a lid on, stirring occasionally

2.Add your vegetable stock and cook for a further 10-15 minutes until the vegetables are tender & the stock has reduced slightly

3.Simply warm the Merchant Gourmet Quinoa, Grains and Red Rice Mix in the microwave for a minute or in a pan with a dash of water then serve with salad and top the vegetables with dried rose petals, chopped mint, and sliced dried apricots. Serve with wedge of lemon
