Veggie Burrito Bowl with Spicy Mexican Grains
Craving Mexican but trying to find a healthier choice? This Burrito bowl tastes amazing without the guilt!
Suitable for dairy-free, gluten-free, vegans and vegetarians
- 1 x 250g pouch of Merchant Gourmet Spicy Mexican Flavoured Grains
- 1 can red kidney beans, drained
- 1/2 tsp cumin
- 1/2 tsp paprika
- 1 tsp corriander
- Salt & Pepper
- 1 tbsp guacamole
- 3 tbsp sweetcorn
- 1 beetroot, baked and sliced
- 1/3 red pepper
- 1 cup mixed greens
1.In a medium bowl, mix together dry spices and red beans and mash slightly with a fork. Set aside
2.Chop beetroot and red pepper before mixing together with sweetcorn
3.To plate up, find a medium bowl and spoon ingredients next to one another
