Wholegrain Rice & Seaweed Sushi Rolls

Sushi is really delicious but shop bought sushi can often be full of refined ingredients and added sugars so it isn’t always the healthiest choice. Making your own sushi at home is not only super fun but it ensures you know exactly what’s going into the delicious rolls!

These sushi rolls are made with Merchant Gourmet’s Rice & Seaweed, which is far more nutritious than the white rice sushi normally contains. The wholegrain rice is lightly flavoured with wakame seaweed which is known for it’s essential nutrients and vitamins, and simply cooked with only water and a dash of olive oil – the perfect sushi filling!

1.First we’ll make the avocado cream to help hold all our ingredients together! Cut the avocado in half, removing the stone, then scoop out the avocado discarding the skin. Place the creamy avocado into a food processor along with the lemon juice, tamari, olive oil, water and a little black pepper. Blend for a couple of minutes until a smooth, creamy mixture forms

2.Lay out one nori sheet and spread a thin layer of the avocado cream all over it

3.Add the wholegrain rice & seaweed down a strip on the left hand side of the nori sheet then top with the carrot and/or pepper slices

4.Now you’re ready to roll! Roll the nori sheet tightly from the left-hand side to the opposite side. Take your time doing this

5.Chop the roll into bite-sized pieces with a sharp knife

6.Repeat with the rest of the nori sheets

7.Serve and enjoy!
