5 Bean Shakshuka with Tahini Drizzle & Feta

A hearty twist on a classic shakshuka, combining our 5 Bean Medley with a rich harissa-spiced tomato sauce and perfectly runny eggs. Finished with a creamy tahini drizzle, feta and fresh herbs, it's packed with flavour and perfect for brunch, lunch or dinner.

5 Bean Shakshuka with Tahini Drizzle & Feta
Ingredients
  • 1 pouch Merchant Gourmet 5 Bean Medley
  • 1 x 400g tin good-quality chopped tomatoes
  • 1 red pepper, deseeded and roughly chopped
  • 1 small white onion, finely diced
  • 2 garlic cloves, finely sliced
  • 2 tbsp harissa paste
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Pinch cayenne pepper
  • 1 tsp sugar
  • 2 tbsp olive oil
  • Salt and black pepper
  • 4 large eggs
  • Tahini Drizzle
  • 3 tbsp tahini
  • Juice of 1 lemon
  • 1 tbsp yoghurt
  • 1 tsp harissa paste
  • 1 small garlic clove, finely grated
  • 3–4 tbsp ice-cold water
  • Pinch salt
  • To Serve
  • 80g feta, crumbled
  • Fresh flat-leaf parsley, roughly torn
  • Fresh mint leaves
  • Warm flatbreads or crusty bread

5 Bean Medley
  1. Start by making the tahini drizzle. Whisk together the tahini, yoghurt, harissa paste, lemon juice and grated garlic.
  2. Add the ice-cold water a tablespoon at a time, whisking continuously until smooth and drizzleable. Season with a pinch of salt and set aside.
  3. Heat the olive oil in a large frying pan or skillet over a medium heat.
  4. Add the onion and cook for 6–7 minutes until soft and translucent.
  5. Stir in the garlic and red pepper and cook for a further 3–4 minutes until softened.
  6. Add the harissa paste, cumin, smoked paprika and cayenne. Cook for 1 minute until fragrant.
  7. Pour in the chopped tomatoes and add the sugar. Season generously with salt and black pepper.
  8. Simmer for 8–10 minutes, stirring occasionally, until the sauce has thickened slightly.
  9. Add the Merchant Gourmet 5 Bean Medley and stir through. Taste and adjust the seasoning if needed.
  10. Using the back of a spoon, make four wells in the sauce. Crack an egg into each well.
  11. Cover with a lid and cook over a medium-low heat for 5–6 minutes, until the whites are set but the yolks remain runny. Remove the lid and drizzle over the tahini sauce.
  12. Scatter over the feta, parsley and mint. Serve immediately with warm flatbreads or crusty bread.
