Creamy Butter Lentils with Halloumi Croutons

This rich and creamy butter lentils recipe combines Puy Lentils with warming spices and golden halloumi croutons for the ultimate comfort food. Perfect for cosy evenings, it's an easy vegetarian dinner that's full of flavour.

Creamy Butter Lentils with Halloumi Croutons
Ingredients
  • 1 pouch Merchant Gourmet Puy Lentils
  • 35g salted butter
  • 1 shallot, finely diced
  • 4 garlic cloves, finely chopped
  • 5cm piece fresh ginger, finely grated
  • 2-3 tbsp tomato purée
  • 1½ tsp garam masala
  • ½ tsp ground turmeric
  • 1 tsp cumin seeds
  • 1 tsp ground coriander
  • 1 tsp chilli powder
  • 150ml double cream
  • Juice of ½ lemon
  • 15g fresh coriander, chopped, plus extra to serve
  • 250g halloumi, cut into bite-sized cubes
  • Olive oil
  • Sea salt

  1. Melt the butter in a large frying pan over a medium heat. Add the shallot with a pinch of salt and cook for 4-5 minutes until softened. Stir in the garlic and ginger and cook for 1 minute.
  2. Add the cumin seeds, garam masala, turmeric, ground coriander and chilli powder. Cook for 1-2 minutes until fragrant.
  3. Meanwhile, toss the halloumi with a drizzle of olive oil and a pinch of ground cumin, if using. Air fry at 180°C for 8 minutes, shaking halfway through, or pan-fry for 4-5 minutes until golden on all sides.
  4. Stir the tomato purée into the spiced butter mixture and cook for 1 minute. Pour in the double cream and stir well, then add the Merchant Gourmet Puy Lentils with a splash of water to loosen the sauce.
  5. Simmer gently for 3-4 minutes until heated through. Stir in the lemon juice and chopped coriander, then season to taste.
  6. Divide between bowls and top with the crispy halloumi croutons, a little extra coriander and an extra squeeze of lemon, if you like.
