Beetroot, Chestnut & Lentil Wellington

A stunning plant-based centrepiece packed with Chestnut Purée, Puy Lentils, quinoa and beetroot, wrapped in crisp golden puff pastry. Rich, hearty and full of festive flavour, it's the perfect vegetarian alternative for Christmas lunch or special occasions.

Ingredients
  • Beetroot, Chestnut & Lentil Filling
  • 140g Merchant Gourmet Red & White Quinoa
  • 50g breadcrumbs
  • 135g ground almonds
  • 450g beetroot, peeled
  • 200g Merchant Gourmet Chestnut Purée
  • 200g Merchant Gourmet Puy Lentils
  • 100g ground flaxseed
  • 20 sage leaves, finely chopped
  • Small bunch fresh parsley, finely chopped X
  • 4 tsp onion powder
  • 4 tsp ground cumin
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • Mushroom Layer
  • 1 tbsp olive oil
  • 175g chestnut mushrooms, finely chopped
  • 1 small white onion, finely chopped
  • 1 garlic clove, minced
  • 1 tsp tamari
  • Pinch dried thyme
  • Pastry
  • 2 x 320g ready-rolled vegan puff pastry sheets
  • Approximately 80ml almond or oat milk
  • Optional Decoration
  • Sesame seeds
  • Pink peppercorns

Chestnut Purée
Chestnut Purée
  1. Preheat the oven to 200°C.
  2. In a large bowl, combine the quinoa, breadcrumbs and ground almonds.
  3. Add the beetroot, Merchant Gourmet Chestnut Purée and Merchant Gourmet Simply Cooked Puy Lentils to a food processor and blend until a thick purée forms.
  4. Add the purée to the quinoa mixture along with the flaxseed, sage, parsley, onion powder, cumin, thyme and black pepper. Mix thoroughly until fully combined.
  5. Shape the mixture into a long log, leaving a generous border if using the pastry sheet as a guide.
  6. Transfer to a lined tray and chill in the fridge for 30 minutes.
  7. Meanwhile, heat the olive oil in a frying pan over a medium heat and cook the onion until softened and translucent.
  8. Add the mushrooms and garlic and cook until the mushrooms have released their moisture and the mixture has become fairly dry.
  9. Stir in the tamari and thyme, then remove from the heat and leave to cool slightly.
  10. Place one sheet of puff pastry on a lined baking tray.
  11. Spread the mushroom mixture down the centre, leaving at least a 5cm border around the edge.
  12. Place the chilled beetroot filling on top of the mushrooms.
  13. Cover with the second sheet of pastry and gently mould it around the filling.
  14. Trim any excess pastry and seal the edges with a fork.
  15. Use any leftover pastry for decorative shapes if desired.
  16. Brush the entire Wellington with the oat or almond milk and add any decorations.
  17. Bake for 30 minutes, or until the pastry is golden brown and cooked through.
  18. Leave to stand for a few minutes before slicing and serving with gravy, cranberry sauce and seasonal vegetables.
