Blackened Chicken Quinoa Bowl

Smoky blackened chicken, creamy avocado and a vibrant mango and black bean salsa are layered over Merchant Gourmet Red & White Quinoa in this colourful grain bowl. Packed with fresh flavours and contrasting textures, it's a satisfying, high-protein dinner that's perfect for easy midweek meals and laid-back summer dining.

Blackened Chicken Quinoa Bowl
Ingredients
  • Blackened Chicken
  • 2 boneless, skin-on chicken thighs
  • ½ tbsp cornflour
  • 1 tsp paprika
  • 1 tsp chilli flakes
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 1 tsp caster sugar
  • A pinch of sea salt
  • 2 tbsp rapeseed oil (or another high smoke-point oil)
  • Mango & Black Bean Salsa
  • 1/2 pouch Merchant Gourmet Smoky Black Turtle Beans
  • ½ mango, diced
  • 2 spring onions, finely sliced
  • A handful of fresh coriander, chopped
  • 1 jalapeño, finely diced
  • 1 tbsp extra virgin olive oil
  • 1 tsp Tajín seasoning
  • Juice of ½ lime
  • To Serve
  • 1 pouch Merchant Gourmet Red & White Quinoa
  • 1 avocado, sliced
  • 2 tbsp sour cream
  1. Pat the chicken dry with kitchen paper. Toss with the cornflour, shaking off any excess.
  2. In a small bowl, combine the paprika, chilli flakes, oregano, cumin, sugar and sea salt. Rub the spice mixture all over the chicken, then drizzle with 1 tbsp of the oil. Set aside for 20–30 minutes if time allows.
  3. Meanwhile, combine the black beans, mango, spring onions, coriander, jalapeño, olive oil, Tajín and lime juice in a bowl. Mix well and season to taste.
  4. Heat the remaining oil in a heavy-based frying pan over a medium-high heat. Add the chicken skin-side down and cook for 5–6 minutes until deeply golden and crisp.
  5. Turn the chicken over and cook for a further 5–6 minutes, or until cooked through. Transfer to a board and rest for 5 minutes before slicing.
  6. Heat the Merchant Gourmet Red & White Quinoa according to the pack instructions.
  7. Divide the quinoa between two bowls and top with the mango and black bean salsa, sliced avocado and blackened chicken.
  8. Finish with a dollop of sour cream and serve immediately.
