Cajun Lentil Burritos with Coriander Rice

Cajun Lentil Burritos with Coriander Rice
Ingredients
  • Coriander Dressing
  • 2 jalapeños, finely chopped
  • Small handful fresh coriander, divided
  • Small handful fresh parsley, finely chopped
  • 2 garlic cloves, grated
  • 1 lime, juiced
  • 100ml extra virgin olive oil
  • ½ tsp salt
  • Coriander Rice
  • 200g basmati rice
  • 1 tsp ground cumin
  • 1 lime, juiced
  • ½ tsp salt
  • Burrito Filling
  • 1 onion, finely chopped
  • 1 tomato, finely chopped
  • 2 avocados
  • 1 lettuce, shredded
  • 2 pouches Merchant Gourmet Cajun Style Lentils & Red Kidney Beans
  • 4 tbsp vegan mayonnaise
  • 4 large tortillas
  • Salt and black pepper
  1. Begin with the dressing. Finely chop the jalapeños, coriander and parsley, reserving 1 tablespoon of coriander for the rice. Add to a bowl with the garlic, lime juice, olive oil and salt. Stir to combine and set aside.
  2. Rinse the rice until the water runs almost clear. Place in a saucepan with 500ml water, the cumin and remaining salt. Bring to a simmer and cook for 10 minutes, or until tender.
  3. Stir the juice of the second lime and the reserved coriander through the cooked rice.
  4. Prepare the fillings by finely chopping the onion and tomato, shredding the lettuce and slicing the avocados.
  5. Lightly mash half of the avocado with a little salt and pepper, then stir through the onion and tomato to create a chunky avocado salsa. Slice the remaining avocado.
  6. Preheat the oven to 200°C.
  7. Warm the tortillas briefly to soften. Heat the Merchant Gourmet Cajun Style Lentils & Red Kidney Beans according to the packet instructions.
  8. Spread a spoonful of vegan mayonnaise onto each tortilla. Top with coriander rice, Cajun lentils, coriander dressing, avocado salsa, sliced avocado and lettuce.
  9. Roll tightly into burritos, wrap in foil, slice in half and serve warm.
