- Prepare a barbecue with a medium-high heat, or preheat a griddle pan.
- Brush the aubergines with olive oil and season with salt and pepper. Place cut-side down directly over the heat and cook for 10–15 minutes, turning occasionally, until softened and deeply charred.
- Meanwhile, make the chickpea topping. In a large bowl, combine the Jumbo Chickpeas, garlic, cumin, lemon zest, lemon juice, olive oil and chopped mint. Season well and mix together.
- In a separate bowl, whisk together the Greek yoghurt, tahini, lemon juice, garlic and salt. Add a splash of water if needed to create a smooth, spreadable consistency.
- Spread the yoghurt tahini mixture generously across a serving platter.
- Slice each aubergine around two-thirds of the way through and gently press open. Arrange over the yoghurt base.
- Spoon over the herby chickpeas and any dressing from the bowl.
- Finish with toasted pine nuts, fresh mint and a generous drizzle of extra virgin olive oil before serving.
