Spiced Chestnut Custard Tart

A festive twist on the classic custard tart. Chestnut Purée lends a rich, nutty flavour to the silky baked custard, while warming cinnamon and freshly grated nutmeg make this an elegant dessert perfect for the colder months.

Spiced Chestnut Custard Tart
Ingredients
  • 1 block shop-bought shortcrust pastry
  • 450ml double cream
  • 200g Merchant Gourmet Chestnut Purée
  • 1 vanilla pod, split and seeds scraped (or 2 tsp vanilla extract)
  • ½–1 tsp ground cinnamon
  • 8 egg yolks
  • 150g golden caster sugar
  • Freshly grated nutmeg

  1. Preheat the oven to 180°C.
  2. Roll out the shortcrust pastry and use it to line a tart tin.
  3. Prick the base all over with a fork, line with baking paper and fill with baking beans or rice.
  4. Blind bake for 20 minutes until the edges are lightly golden.
  5. Remove the baking paper and baking beans, then bake for a further 10 minutes. Leave to cool slightly and trim any excess pastry.
  6. Meanwhile, place the double cream, Merchant Gourmet Chestnut Purée and vanilla seeds (plus the pod, if using) into a saucepan.
  7. Heat gently and simmer for 5 minutes, whisking regularly until the purée is fully incorporated.
  8. Remove from the heat and discard the vanilla pod if used.
  9. In a large bowl, whisk together the egg yolks and golden caster sugar until pale and smooth.
  10. Gradually pour the warm cream mixture into the eggs, whisking continuously.
  11. Stir through the cinnamon.
  12. Pour the custard into the baked pastry case and grate over a generous layer of fresh nutmeg.
  13. Reduce the oven temperature to 160°C and bake for 30 minutes, or until just set with a slight wobble in the centre.
  14. Leave to cool completely before slicing and serving.
