Creamy Lentil Bolognese

Rich, creamy and packed with flavour, this speedy lentil bolognese is made with Merchant Gourmet Tomatoey French Puy & Green Lentils for an easy vegetarian dinner in just 15 minutes. Tossed with pasta, spinach and sun-dried tomatoes, it's a comforting midweek meal that's guaranteed to become a family favourite.

Creamy Lentil Bolognese
Ingredients
  • 300g penne pasta
  • 1 tbsp olive oil
  • 1 onion, finely sliced
  • 2 garlic cloves, finely chopped
  • 2 pouches Merchant Gourmet Tomatoey French Lentils
  • 300ml single cream
  • 10 sun-dried tomatoes, finely chopped
  • 60g spinach, roughly chopped
  • Sea salt and black pepper
  • Fresh thyme leaves (optional)
  1. Bring a large pan of salted water to the boil. Add the penne and cook according to the pack instructions until al dente. Reserve 60ml of the pasta cooking water before draining.
  2. Meanwhile, heat the olive oil in a large frying pan over a medium heat. Add the onion and cook for 4–5 minutes until softened.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Heat the Merchant Gourmet Tomatoey French Puy & Green Lentils according to the pack instructions.
  5. Add the heated lentils to the pan along with the single cream, sun-dried tomatoes and spinach. Season with sea salt and black pepper, then bring to a gentle simmer for 2–3 minutes until the spinach has wilted.
  6. Add the drained pasta and a splash of the reserved pasta water. Toss well until the sauce is silky and coats the pasta evenly, adding a little more pasta water if needed.
  7. Divide between bowls and finish with a scattering of fresh thyme and an extra grind of black pepper before serving.
