Garlic Chestnuts & Savoy Cabbage on Grilled Sourdough

A comforting combination of sautéed chestnuts, sweet cabbage and herbs piled onto grilled sourdough and finished with a creamy chestnut tahini dressing. Perfect for breakfast, brunch, lunch or a simple supper.

Garlic Chestnuts & Savoy Cabbage on Grilled Sourdough
Ingredients
  • 1 tbsp vegan butter or olive oil
  • 1 garlic clove, finely sliced
  • 300g savoy cabbage, finely shredded
  • 300g red cabbage, finely shredded
  • 1 red onion, finely sliced
  • 1 pouch Merchant Gourmet Whole Chestnuts
  • Handful curly parsley, finely chopped
  • 6 sage leaves
  • Pinch sea salt and black pepper
  • Pinch dried chilli flakes
  • Juice of ½ lemon
  • Chestnut Purée Dressing
  • 1 x 180g pouch Merchant Gourmet Whole Chestnuts
  • 2 tbsp tahini
  • 1 tbsp balsamic vinegar
  • Juice of ½ lemon
  • Pinch sea salt and black pepper
  • 2 tbsp curly parsley, finely chopped
  • To Serve
  • 4–6 slices sourdough bread, grilled

Whole Chestnuts
Whole Chestnuts
  1. Heat the vegan butter or olive oil in a large non-stick frying pan over a medium heat.
  2. Add the garlic, savoy cabbage, red cabbage, onion and Merchant Gourmet Whole Chestnuts.
  3. Sauté for 4–5 minutes, stirring regularly.
  4. Stir through the parsley, sage, seasoning, chilli flakes and lemon juice.
  5. Continue cooking for a further 2–3 minutes until softened.
  6. Meanwhile, whisk together the Merchant Gourmet Whole Chestnuts, tahini, balsamic vinegar, lemon juice, parsley and seasoning, adding a splash of water as needed to create a smooth dressing consistency.
  7. Stir 3–4 tablespoons of the dressing through the cabbage and chestnut mixture.
  8. Arrange the grilled sourdough on serving plates.
  9. Spoon over the chestnut and cabbage mixture.
  10. Finish with an extra drizzle of the chestnut dressing and serve immediately.
