Masala Beans & Akoori Scrambled Eggs
Ingredients
  • Seekh Kebabs
  • 500g lamb mince
  • 2 garlic cloves, crushed
  • 1 red chilli, finely chopped
  • 1 knob ginger, grated
  • 1 tbsp garam masala
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • ½ tsp chilli powder
  • Pinch of salt
  • 1 bunch fresh coriander, finely chopped
  • 1 egg
  • Akoori Eggs
  • 1 knob butter
  • ½ white or red onion, finely chopped
  • 1 garlic clove, crushed
  • 1 red chilli, finely chopped
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • 1 tsp ground turmeric
  • 1 tomato, finely chopped
  • Sea salt and black pepper
  • 4 eggs, lightly beaten
  • 1 bunch fresh coriander, chopped
  • Naan
  • 120g self-raising flour
  • 120g Greek yoghurt
  • Pinch of salt
  • To Serve
  • 8 rashers streaky bacon
  • 1 pouch Merchant Gourmet Masala Baked Beans
  1. Melt the butter in a large frying pan over a medium heat. Cook the onion for 5–6 minutes until softened, then stir in the garlic, chilli, ground cumin, ground coriander, turmeric and chilli flakes. Cook for 1 minute until fragrant.
  2. Add the tomato and cook for 3–4 minutes until softened. Season with salt and black pepper.
  3. Lightly beat the eggs, then pour them into the pan. Cook gently, stirring continuously, until softly scrambled but still creamy. Stir through most of the chopped coriander.
  4. Meanwhile, heat the Masala Beans according to the packet instructions.
  5. Spoon the beans onto serving plates, top with the akoori scrambled eggs and finish with the remaining coriander. Serve immediately with warm toast or naan.
