Roasted Pumpkin with Chestnut Puree & Dukkah

Roasted Pumpkin with Chestnut Puree & Dukkah
Ingredients
  • Roasted Pumpkin
  • 1 Delica pumpkin, deseeded and sliced
  • 2 sprigs rosemary
  • Olive oil
  • Salt
  • Chestnut Purée
  • 1¾ packs Merchant Gourmet Whole Chestnuts
  • 500ml vegetable stock
  • 4 sprigs thyme
  • 50g salted butter or vegan alternative
  • Chestnut Dukkah
  • Remaining ¼ pack Merchant Gourmet Whole Chestnuts, roughly chopped
  • 1 tbsp coriander seeds
  • 1 tbsp cumin seeds
  • 30g pumpkin seeds
  • 30g sunflower seeds
  • 30g sesame seeds
  • 1 tsp chilli flakes
  • Sumac Dressing
  • 1 garlic clove, minced
  • 1 tbsp sumac
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • To Serve
  • Fresh parsley
  • Red chilli, finely sliced
  • Flatbreads

Whole Chestnuts
Whole Chestnuts
  1. Preheat the oven to 200°C.
  2. Place the pumpkin on a baking tray. Drizzle with olive oil, scatter over the rosemary and season with salt. Roast for 30 minutes, or until tender and caramelised.
  3. Meanwhile, add 1¾ packs of the Merchant Gourmet Whole Chestnuts to a saucepan with the vegetable stock, thyme and a pinch of salt. Bring to the boil, then simmer for 10–15 minutes.
  4. Remove the thyme and blend the chestnuts with the butter until completely smooth. Set aside.
  5. For the dukkah, roughly chop the remaining chestnuts and lightly crush the coriander and cumin seeds.
  6. Toast the chestnuts, spices, pumpkin seeds, sunflower seeds, sesame seeds and chilli flakes in a dry frying pan until fragrant. Season with a pinch of salt.
  7. Mix together the garlic, sumac, red wine vinegar, olive oil and salt to make the dressing.
  8. Spread the chestnut purée onto a serving platter.
  9. Arrange the roasted pumpkin over the top.
  10. Spoon over the dukkah and drizzle with the sumac dressing.
  11. Finish with fresh parsley and sliced red chilli.
  12. Serve with warm flatbreads.
