Seabass with Herby Puy Lentils & Caper Salsa

An impressive-looking dinner that's surprisingly simple to make. Crispy-skinned seabass is served over creamy lemony Puy lentils with spinach and garlic, then finished with a punchy caper and raisin salsa for the perfect balance of richness and freshness.

Seabass with Herby Puy Lentils & Caper Salsa
Ingredients
  • 1 pouch Merchant Gourmet Puy Lentils
  • 3–4 garlic cloves, finely chopped
  • 4 handfuls spinach
  • 3 tbsp double cream
  • 1 lemon, zest and juice
  • 2 tbsp olive oil, plus extra for frying
  • Salt and black pepper
  • 2 fillets white fish or seabass, skin on
  • 2 tbsp capers
  • 2 tbsp butter
  • 2 tbsp sultanas
  • 3–4 tbsp white wine
  • Handful fresh parsley, finely chopped

Puy Lentils
  1. Heat the olive oil in a large frying pan over a low heat. Add the garlic and cook gently for 5 minutes until softened and fragrant.
  2. Add the spinach and cook until wilted.
  3. Stir in the cream, Merchant Gourmet Puy Lentils and the juice of half the lemon. Season with salt and pepper and cook gently while you prepare the fish.
  4. Pat the fish dry with kitchen paper and lightly score the skin.
  5. Heat a little olive oil in a separate frying pan over a medium-high heat. Add the fish skin-side down and cook for 2–3 minutes until crisp. Flip and cook for a further 2–3 minutes until just cooked through.
  6. Remove the fish from the pan and set aside.
  7. Add the butter to the same pan. Once melted, stir in the capers, sultanas and lemon zest. Cook for 2 minutes.
  8. Pour in the white wine and simmer for a further 2 minutes until slightly reduced. Stir through the parsley and a squeeze of lemon juice.
  9. Spoon the creamy Puy lentils onto plates and top with the seabass.
  10. Finish with the warm caper salsa and serve.
