Spanish Tomato & Grain Soup

This hearty one-pot soup combines blistered tomatoes, garlic and warming spices with Spanish Style Grains for a comforting meal that's ready in just 15 minutes. Finished with fresh herbs and a swirl of lemon yoghurt, it's perfect for easy lunches or cosy weeknight dinners.

Spanish Tomato & Grain Soup
Ingredients
  • 4 tbsp olive oil, plus extra to serve
  • 200g cherry tomatoes
  • 3 spring onions, finely sliced
  • 5 large garlic cloves, finely grated
  • 8 sun-dried tomatoes, finely chopped
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp dried oregano
  • 1 tsp black pepper
  • 1 tsp soy sauce
  • 1½ tbsp honey
  • 750ml vegetable stock
  • 1 pouch Merchant Gourmet Spanish Style Grains
  • Pinch of salt
  • Lemon Yoghurt
  • 2 tbsp Greek yoghurt
  • ¼ lemon, juiced
  • Pinch of salt
  • To Serve
  • 25g fresh coriander or parsley, chopped
  1. Heat the olive oil and cherry tomatoes in a medium saucepan over a medium-low heat. Add a pinch of salt, cover with a lid and cook for 5 minutes until the tomatoes begin to blister.
  2. Add the spring onions, garlic and sun-dried tomatoes. Use a wooden spoon to gently crush the softened tomatoes and cook for 1 minute.
  3. Stir in the smoked paprika, cumin, coriander, oregano, black pepper and soy sauce. Cook for 1 minute until fragrant.
  4. Add the Merchant Gourmet Spanish Style Grains, followed by the vegetable stock and honey. Bring to a gentle simmer and cook for 6 minutes with the lid on.
  5. Meanwhile, whisk together the Greek yoghurt, lemon juice and salt. Add a splash of water if needed to create a spoonable consistency.
  6. Taste the soup and add a little extra stock if you prefer a looser texture.
  7. Divide between bowls and finish with the chopped herbs, a drizzle of the lemon yoghurt and a little extra olive oil.
