Roasted Fruit and Freekeh Salad
Try mixing up by adding roasted fruit to your Freekeh salads with cinnamon and sweet chilli
Suitable for dairy-free, vegans and vegetarians
- 1 x 250g pouch of Merchant Gourmet Simply Cooked Freekeh
- 2 Peaches
- 2 Nectarines
- 1 tsp cinnamon
- 1 tbsp olive oil
- 200g of spinach
- 200g of mixed salad leaves
- 2 tbsp sweet chilli sauce
- Chilli Flakes
- 2 tsp tomato purée
1.Preheat oven to 180 degrees. Slice fruit and place down on a lined baking tray before sprinkling with cinnamon. Put in the oven to bake for 25-30 minutes until fully roasted
2.Meanwhile, in a small bowl, stir together sweet chilli sauce and olive oil
3.Take a large bowl and toss together greens with Merchant Gourmet Freekeh grains
4.Cover with sweet chilli glaze. Plate up salad before topping with cinnamon-roasted fruit
