Sesame-Rolled Tofu with Ponzu Dressing

“This is a great dish for Vegans and Vegetarians too, but as an avid meat eater, I love eating this too. The Ponzu dressing isn’t totally authentic (one needs some rather rarified Japanese Citrus for that) but it’s a great one to use for salads, fish, chicken etc.”

Ingredients
- 1 x 250g pouch of Merchant Gourmet Zingy Korean Style Grains
- 200g fresh soft tofu
- 1 tbsp of sesame seeds
- 4 spring onions
- Splash of sesame
For the dressing; (enough for a few portions)
- 150ml light soy sauce
- Juice and zest from one mandarin
- Juice from one lemon
- 1 tbsp sesame oil
- 1 tsp sesame seeds
- 1 tsp finely grated ginger
Instructions
1.This dish is so simple! Firstly, make the dressing by mixing the soy, ginger, sesame oil, lemon and mandarin juice together in a little saucepan and bringing to the boil
2.Simmer for 5 minutes, take off the heat and add the zest of mandarin
3. Heat up a little more sesame oil, add three sliced spring onions (retaining one for garnish), and once softened add the Merchant Gourmet Korean Grains until warmed through. Serve between two plates
4.Next, take the tofu carefully out of the packet and roll in the sesame seeds
5.Cut the tofu into four slices and arrange between the two plates
6.To serve, simply drizzle with with the Ponzu Dressing and sprinkle over some extra spring onions
