Quinoa & Blueberry Breakfast Bars

These Quinoa & Blueberry Breakfast Bars are perfect if you’re looking for a delicious, nutritious breakfast throughout the week when perhaps you don’t have time to make a bowl of porridge or homemade smoothie. These bars are a great source of protein and fibre thanks to the quinoa and seed mix (chia, pumpkin and sunflower) which will keep your fuelled all morning, aid digestion and keep your blood sugar levels steady. Quinoa is also packed full of iron, magnesium, copper and B6!

Every mouthful is bursting with juicy, fresh blueberries which are just heavenly when cooked, sweet hints of vanilla, luscious texture from the grains and light sweetness from banana and pure maple syrup.

Suitable for dairy-free, gluten-free, vegans and vegetarians

Quinoa Red & White



1.Pre-heat the oven to 150 degrees celsius

2.Mix the chia seeds with 6 tbsp water and leave to thicken up for 5-10 minutes

3.Mash the bananas in a bowl until smooth then add the maple syrup, cashew butter and vanilla extract. Stir well

4.Add the oats, Merchant Gourmet Quinoa and chia seed mixture to the bowl. Stir everything together

5.Add the blueberries to the mixture, stirring carefully

6.Line a baking tray with baking paper then pour in the breakfast bar mixture. Spreading out evenly

7.Bake in the oven for 20-25 minutes

8.Leave to cool for at least 15 minutes before cutting into squares and enjoying
