Baked Cheesy Peppers with Cajun-Style Lentils

Sweet roasted peppers are filled with Glorious Grains, topped with Cajun-Style Lentils and finished with bubbling melted cheese. Simple to make and packed with flavour, they're perfect for a quick and satisfying midweek dinner.

Baked Cheesy Peppers with Cajun-Style Lentils
Ingredients
  • 4 mixed peppers, deseeded and halved
  • 1 pouch Merchant Gourmet Cajun-Style Lentils & Red Kidney Beans
  • 1 pouch Merchant Gourmet 5 Glorious Grains
  • 100g Red Leicester cheese, grated
  • 1 tbsp fresh parsley, chopped
  • Green salad, to serve
  1. Preheat the oven to 200°C.
  2. Arrange the pepper halves in a deep ovenproof dish.
  3. Heat the Merchant 5 Gourmet Glorious Grains according to the packet instructions.
  4. Fill each pepper half with the grains.
  5. Cover the dish with foil and bake for 15–20 minutes until the peppers are just tender.
  6. Meanwhile, heat the Merchant Gourmet Spicy Cajun-Style Lentils & Red Kidney Beans according to the packet instructions.
  7. Spoon the lentils over the grain-filled peppers.
  8. Scatter over the grated cheese.
  9. Return to the oven, uncovered, for 5 minutes until the cheese has melted.
  10. Finish with the chopped parsley and serve with a green salad.
