Basa, Turkish Salad & Wild Rice

Flaky pan-fried basa is served with Brown, Red & Wild Rice and a vibrant Turkish-style tomato salad. Fresh herbs, lemon and sumac bring brightness and flavour to this light yet satisfying meal that's ready in minutes.

Basa, Turkish Salad & Wild Rice
Ingredients
  • 3 tomatoes, deseeded and diced
  • 1 red onion, thinly sliced
  • ½ bunch flat-leaf parsley, finely chopped
  • Juice of ½ lemon
  • ½ tsp salt
  • 1–2 tbsp ground sumac
  • 2 basa fillets
  • 1 pouch Merchant Gourmet Brown, Red & Wild Rice
  • 1 tbsp olive oil
  • 20g butter
  • 2 whole garlic cloves
  • Salt and black pepper
  1. Combine the tomatoes, red onion, parsley, lemon juice, salt and sumac in a bowl. Mix well and set aside.
  2. Season the basa fillets with salt and black pepper.
  3. Heat the olive oil in a frying pan over a medium-high heat.
  4. Add the basa fillets and cook for around 2 minutes on one side until lightly golden.
  5. Turn the fish over and add the butter and garlic cloves to the pan.
  6. Tilt the pan and spoon the melted butter over the fish repeatedly. Cook for a further 2–3 minutes until the fish is cooked through and flakes easily.
  7. Heat the Merchant Gourmet Brown, Red & Wild Rice according to the packet instructions.
  8. Divide the rice between serving plates.
  9. Top with the basa fillets and spoon over the Turkish salad.
