- Pat the chicken dry with kitchen paper. Toss with the cornflour, shaking off any excess.
- In a small bowl, combine the paprika, chilli flakes, oregano, cumin, sugar and sea salt. Rub the spice mixture all over the chicken, then drizzle with 1 tbsp of the oil. Set aside for 20–30 minutes if time allows.
- Meanwhile, combine the black beans, mango, spring onions, coriander, jalapeño, olive oil, Tajín and lime juice in a bowl. Mix well and season to taste.
- Heat the remaining oil in a heavy-based frying pan over a medium-high heat. Add the chicken skin-side down and cook for 5–6 minutes until deeply golden and crisp.
- Turn the chicken over and cook for a further 5–6 minutes, or until cooked through. Transfer to a board and rest for 5 minutes before slicing.
- Heat the Merchant Gourmet Red & White Quinoa according to the pack instructions.
- Divide the quinoa between two bowls and top with the mango and black bean salsa, sliced avocado and blackened chicken.
- Finish with a dollop of sour cream and serve immediately.
