Cajun-Style Beans with Creamy Polenta

Creamy miso polenta topped with Cajun-Style Lentils, sweet tomatoes and a gentle kick of chilli. Finished with cooling yoghurt, fresh chives and a squeeze of lime, it's a comforting meal that's packed with flavour and ready in minutes.

Cajun-Style Beans with Creamy Polenta
Ingredients
  • Cajun-Style Beans
  • 3½ tbsp olive oil
  • 150g sweet cherry tomatoes, finely chopped
  • ½ Scotch bonnet chilli, deseeded and finely chopped
  • ½ garlic clove, crushed
  • 1½ tbsp water
  • ¼ tsp smoked paprika
  • ½ tsp fine salt
  • 1 pouch Merchant Gourmet Cajun-Style Lentils
  • Juice of 1 lime
  • Creamy Polenta
  • 200ml water
  • 100g unsweetened coconut yoghurt, plus extra to serve
  • 50g instant polenta
  • 2 tbsp white miso paste
  • 1 tbsp olive oil
  • ½ tsp dried onion flakes or granules (optional)
  • Black pepper
  • To Serve
  • 1 lime, cut into wedges
  • 5g chives, finely chopped
  1. Add the olive oil, tomatoes, Scotch bonnet chilli, garlic, water, smoked paprika, salt and Merchant Gourmet Spicy Cajun-Style Lentils to a frying pan over a medium heat.
  2. Cook for a few minutes until heated through.
  3. Remove from the heat, stir through the juice of 1 lime and set aside.
  4. Add the water, coconut yoghurt, polenta, miso paste, olive oil, onion flakes (if using) and black pepper to a saucepan.
  5. Place over a medium-low heat and cook, whisking continuously, for around 4 minutes until smooth and thickened.
  6. Spoon the polenta onto serving plates.
  7. Top with the Cajun-style lentils.
  8. Add a spoonful of yoghurt to each serving.
  9. Finish with the chopped chives, a drizzle of olive oil and the remaining lime wedges.
