Caramelised Chestnut Panna Cotta with Clementine Dressing

A showstopping festive dessert featuring silky vanilla panna cotta, caramelised Chestnuts, fragrant clementine dressing and crisp chestnut cookies. Elegant, indulgent and packed with seasonal flavour, it's the perfect finale to a Christmas feast.

Caramelised Chestnut Panna Cotta with Clementine Dressing
Ingredients
  • Caramelised Chestnuts
  • 2 pouches Merchant Gourmet Whole Chestnuts
  • 150g caster sugar
  • 1 tsp ground cinnamon
  • Panna Cotta
  • 1 x 400ml tin full-fat coconut milk
  • 1 tbsp vanilla bean paste
  • 250ml soy milk
  • 6 heaped tbsp cornflour
  • 80ml maple syrup
  • Clementine Dressing
  • 4 clementines, peeled and segmented
  • 375ml orange juice
  • 200g caster sugar
  • 1 star anise
  • Chestnut Cookies
  • 125g icing sugar
  • 250g plain flour
  • 125g vegan margarine
  • 2 tbsp water
  • Pinch sea salt
  • 60g caramelised chestnuts (from above)

  1. Preheat the oven to 170°C and line a baking tray with baking paper.
  2. To make the caramelised chestnuts, place a non-stick frying pan over a low heat and add the caster sugar.
  3. Allow the sugar to melt to a deep amber caramel, then stir through the Merchant Gourmet Whole Chestnuts and cinnamon until coated.
  4. Carefully transfer the chestnuts to a lined tray and leave to cool completely.
  5. Place six panna cotta moulds onto a tray.
  6. Heat the coconut milk and vanilla bean paste in a saucepan over a low heat and leave to infuse for 5 minutes.
  7. In a bowl, whisk together the soy milk, cornflour and maple syrup until smooth.
  8. Add to the saucepan and stir continuously until thickened, around 4–5 minutes.
  9. Remove from the heat and divide between the moulds.
  10. Drop a caramelised chestnut into each mould, cover and chill for at least 3 hours until set.
  11. To make the cookies, place the flour, icing sugar, vegan margarine, 60g caramelised chestnuts and sea salt into a food processor.
  12. Pulse until a dough forms, adding the water if needed.
  13. Wrap and chill for 30 minutes.
  14. Roll out to approximately 4mm thick and cut into shapes.
  15. Bake for 12–15 minutes until lightly golden, then cool on a wire rack.
  16. For the dressing, place the clementines, orange juice, caster sugar and star anise into a saucepan.
  17. Simmer gently for 15 minutes until lightly reduced.
  18. To serve, briefly dip the panna cotta moulds into hot water to release them.
  19. Turn onto serving plates and spoon over the clementine dressing.
  20. Serve with the chestnut cookies and any remaining caramelised chestnuts.
