Ingredients

  • 1 pouch Merchant Gourmet Puy Lentils
  • 1 aubergine, cut in sticks
  • 1 tin chopped tomatoes 
  • 1 onion, chopped
  • 1 garlic clove, finely chopped
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • A handful of parsley 

Instructions

  1. Preheat the air fryer to 200 degrees Celsius for 5 minutes. If you do not have an air fryer, pre heat your oven instead to the same temperature. 
  2. Evenly coat your aubergine sticks with the olive oil and place in the air fryer. Cook for 10 minutes, shaking the tray after 5 minutes. Alternatively, if you are using an oven, place the aubergine on a baking tray and roast for 35 minutes, or until golden. 
  3. Meanwhile, sweat the onion and garlic in a large based pan over a medium heat. 
  4. Add the tomatoes and season well. Simmer for 5 minutes. 
  5. Add the Merchant Gourmet Puy Lentils into the tomatoes and simmer for a further 5 minutes. 
  6. To serve, top with aubergine and a sprinkling of parsley.
