Roasted Cauliflower Steaks with Harissa Puy Lentils

Golden roasted cauliflower steaks are served on a silky white bean purée with spicy tomatoey Puy Lentils and tangy pickled onions. Packed with flavour, texture and colour, it's a showstopping plant-based dinner that's surprisingly simple to make.

Roasted Cauliflower Steaks with Harissa Puy Lentils
Ingredients
  • Roasted Cauliflower Steaks
  • 1 cauliflower
  • 1½ tsp harissa paste
  • 1 garlic clove, unpeeled
  • Olive oil
  • Salt and black pepper
  • White Bean Purée
  • 270g white beans, including their liquid
  • Roasted garlic (from above)
  • Juice and zest of ½ lemon
  • Tomatoey Harissa Puy Lentils
  • 1 pouch Merchant Gourmet Puy Lentils
  • 1 red onion, diced
  • 1 x 400g tin good-quality plum tomatoes
  • 1 tsp harissa paste
  • 1 tbsp olive oil
  • Salt and black pepper
  • To Serve
  • 1 red onion, thinly sliced
  • Red wine vinegar
  • Fresh parsley, chopped

Puy Lentils
  1. Preheat the oven to 200°C.
  2. Thinly slice one red onion and place in a bowl with a splash of red wine vinegar and a pinch of salt. Stir occasionally and set aside to lightly pickle.
  3. Cut two large steaks from the centre of the cauliflower and chop the remaining cauliflower into small florets.
  4. Rub the cauliflower steaks with 1 tablespoon olive oil.
  5. Heat 3 tablespoons olive oil in a large frying pan and cook the cauliflower steaks and florets over a medium heat until golden and caramelised on all sides, about 5 minutes.
  6. Transfer 315g of the cauliflower florets to a blender and reserve.
  7. Place the cauliflower steaks, cauliflower leaves, remaining florets and the garlic clove onto a roasting tray. Season with salt and pepper and rub the cauliflower steaks with the harissa paste.
  8. Roast for 15–20 minutes, checking the leaves occasionally and removing them earlier if they become crisp before the cauliflower is cooked.
  9. Meanwhile, heat 1 tablespoon olive oil in a saucepan and cook the diced red onion until softened.
  10. Stir in the plum tomatoes and remaining harissa paste and simmer gently.
  11. Add the Merchant Gourmet Simply Cooked Puy Lentils and continue simmering until rich and thickened. Season to taste.
  12. To make the purée, squeeze the roasted garlic from its skin and add to the blender with the reserved cauliflower florets, white beans, lemon juice and lemon zest.
  13. Blend until completely smooth. Taste and adjust the seasoning if needed.
  14. Spoon the white bean purée onto serving plates.
  15. Top with the roasted cauliflower steaks and spoon over the harissa lentils.
  16. Finish with the pickled onions, crispy cauliflower leaves and freshly chopped parsley.
