Chestnut Christmas Trimmings Pie

The ultimate Boxing Day comfort food. Chestnuts are combined with festive leftovers in a creamy sauce and topped with golden puff pastry for a hearty pie that's perfect for reducing food waste and making the most of Christmas flavours.

Ingredients
  • 2 pouches Merchant Gourmet Whole Chestnuts, chopped
  • 1 onion, finely diced
  • Cooked Christmas leftovers (such as vegetables, stuffing or roast meat)
  • 500ml stock
  • 250ml cream
  • 2 tbsp cornflour
  • Salt and black pepper
  • Olive oil, for frying
  • 1 large roll ready-made puff pastry
  • 1 egg, beaten

  1. Preheat the oven to 190°C.
  2. Chop the Merchant Gourmet Whole Chestnuts and any Christmas leftovers into bite-sized pieces.
  3. Heat a drizzle of olive oil in a large frying pan or ovenproof skillet over a medium heat.
  4. Add the onion and cook for 6–7 minutes until softened. Stir in the chopped leftovers and chestnuts.
  5. Pour in the stock and cream and season with salt and black pepper. Bring to the boil, then reduce to a simmer for 10 minutes.
  6. Mix the cornflour with 3 tablespoons cold water until smooth.
  7. Stir the cornflour mixture into the filling and cook until thickened and glossy. Remove from the heat.
  8. Lay the puff pastry over the top of the pie filling and trim to fit. Use any leftover pastry to create decorative shapes, if desired.
  9. Brush the pastry and decorations with the beaten egg. Bake for 25–30 minutes until the pastry is golden brown and crisp.
  10. Leave to stand for a few minutes before serving.
