Chestnut French Toast

A festive twist on a breakfast classic. Thick slices of bread are soaked in a cinnamon-spiced chestnut custard before being pan-fried until golden and served with a silky chestnut maple syrup, warm fruit and toasted almonds.

Ingredients
  • 2 tbsp ground flaxseed
  • 240ml almond milk
  • 2 tsp caster sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 tbsp Merchant Gourmet Chestnut Purée
  • Pinch of salt
  • 6 thick slices bread, preferably slightly stale
  • Oil, for frying
  • Chestnut Maple Syrup
  • 80ml maple syrup
  • 80ml Merchant Gourmet Chestnut Purée

  1. Place the ground flaxseed, almond milk, caster sugar, vanilla extract, cinnamon, Merchant Gourmet Chestnut Purée and salt into a bowl or blender.
  2. Blend until smooth and fully combined.
  3. Refrigerate for 10 minutes to thicken slightly.
  4. Meanwhile, make the chestnut syrup by blending the maple syrup and Merchant Gourmet Chestnut Purée until smooth.
  5. Heat a lightly oiled non-stick frying pan over a medium heat.
  6. Dip each slice of bread into the French toast mixture, ensuring both sides are evenly coated.
  7. Fry for a few minutes on each side until golden brown and crisp.
  8. Repeat with the remaining bread, stirring the mixture between slices if needed.
  9. Serve warm with the chestnut maple syrup, seasonal fruit and sliced almonds.
