Chestnut & Shallot Tarte Tatin

A savoury twist on the classic French tart, featuring sweet caramelised shallots and chestnuts baked beneath golden puff pastry. Rich, elegant and packed with festive flavour, it's equally at home as a centrepiece or side dish.

Chestnut & Shallot Tarte Tatin
Ingredients
  • 3 tbsp olive oil
  • 6 banana shallots, peeled and halved lengthways
  • 1 x 180g pouch Merchant Gourmet Whole Chestnuts
  • 3 tbsp brown sugar
  • 4 tbsp balsamic vinegar
  • 3 sprigs thyme, plus extra to serve
  • 2 sprigs rosemary
  • Splash of water
  • Salt and black pepper
  • 320g roll ready-made puff pastry

  1. Preheat the oven to 180°C (160°C fan).
  2. Roll or trim the puff pastry into a circle approximately 2.5cm larger than your ovenproof frying pan.
  3. Place the pastry on baking parchment and chill for 20 minutes.
  4. Heat the olive oil in a 10-inch ovenproof non-stick frying pan over a medium heat.
  5. Arrange the shallots cut-side up in the pan and cook for 5 minutes until lightly caramelised.
  6. Add the Merchant Gourmet Whole Chestnuts.
  7. Sprinkle over the brown sugar, then carefully turn the shallots cut-side down and arrange everything neatly in the pan.
  8. Reduce the heat and add the balsamic vinegar, thyme, rosemary and a splash of water.
  9. Simmer gently for 5 minutes until the liquid begins to reduce and thicken.
  10. Season with salt and black pepper and remove from the heat.
  11. Lay the chilled pastry over the filling, tucking the edges down into the pan.
  12. Bake for 25–30 minutes, until the pastry is crisp, puffed and golden brown.
  13. Leave to rest for 5 minutes.
  14. Carefully invert onto a serving plate or board.
  15. Finish with a scattering of fresh thyme leaves and serve.
