Ingredients
- Merchant Gourmet’s Gourmet Baked Beans - 1 Pack
- Sausages (Italian style if you can) - 2
- Eggs - 2
- Onion - 1
- Red pepper - 1
- Garlic - 2 cloves
- Tinned tomatoes - 1 tin
- Eggs - 2
- Basil - A small bunch
- Parmesan - 20 to 30g
- Sourdough - As much as you like
- Salt
- Black pepper
- Olive oil
- Water
Instructions
- Preheat your oven to 180°C (360°F).
- Dice the onion and red pepper, slice the garlic.
- Remove the sausage meat from the skins, and cook in an ovenproof pan (cast-iron or stainless steel works great) with a little olive oil on medium. Break up the sausage as it cooks, and get some nice colour on it. When you’re happy with the colour, remove it from the pan. Don’t worry if there’s a few little bits left in there.
- Add the onion, pepper and garlic, season with salt and cook down until soft (5-6 minutes). Add tomatoes and cook for 5 minutes, then add the Merchant Gourmet beans. Adjust thickness with water if necessary. The base needs to be thick enough to just hold its shape when you create wells for the eggs.
- Create a couple of wells for the eggs and crack them in. Put the pan in the oven and cook until the eggs have solidified but the yolk is still runny/jammy. Keep a keen eye as the yolk can harden pretty quickly.
- Toast your sourdough slices in a pan with some olive oil. Pull the pan out of the oven (use gloves!), top with basil leaves, shavings of parmesan and cracked black pepper. Serve immediately!
