- Trim the ends from the cucumber and place it between two chopsticks on a chopping board. Slice diagonally along the cucumber, allowing the chopsticks to stop the knife from cutting all the way through. Turn the cucumber over and repeat on the other side to create an accordion effect.
- Rub the salt all over the cucumber, making sure it gets into the cuts. Set aside for 10 minutes to draw out excess moisture.
- Meanwhile, finely slice the spring onions and chop the garlic.
- Rinse the cucumber thoroughly under cold water to remove the salt, then pat dry.
- Place the cucumber in a bowl with the spring onions, garlic, sesame seeds, rice vinegar, soy sauce, gochujang and sugar. Toss well until evenly coated.
- Heat the Merchant Gourmet Korean-Style Grains according to the pack instructions.
- Divide the grains between two bowls and top with the smacked cucumber salad. Serve with kimchi and a fried egg, if using.
