Lentil Pigs in Blankets

A festive plant-based twist on a Christmas classic. Puy Lentils and chestnuts are combined with herbs, mustard and breadcrumbs before being wrapped in golden puff pastry and baked until crisp and flaky.

Lentil Pigs in Blankets
Ingredients
  • 1½ tbsp olive oil
  • 1 large white onion, finely chopped
  • 1 celery stick, finely chopped
  • 1 garlic clove, finely chopped
  • 1 pouch Merchant Gourmet Simply Cooked Puy Lentils
  • ½ tbsp Dijon mustard
  • 60ml white wine
  • 1 tsp dried thyme
  • 20g flat-leaf parsley, finely chopped
  • 40g breadcrumbs
  • 4 tsp tamari sauce
  • Pinch coarsely ground black pepper
  • 1 tbsp nutritional yeast
  • ½ tsp ground coriander
  • Handful Merchant Gourmet Whole Chestnuts, coarsely chopped
  • 2 x 320g sheets ready-rolled vegan puff pastry
  • Approx. 80ml almond or oat milk
  • Sesame seeds (optional)

  1. Preheat the oven to 200°C.
  2. Heat the olive oil in a large saucepan over a medium heat.
  3. Add the onion and celery and cook for approximately 5 minutes.
  4. Stir in the garlic and cook for a further 3 minutes, until softened.
  5. Add the Merchant Gourmet Simply Cooked Puy Lentils, Dijon mustard and white wine and cook until the liquid has evaporated.
  6. Remove from the heat and stir through the thyme, parsley, breadcrumbs, tamari, black pepper, nutritional yeast, ground coriander and Merchant Gourmet Whole Chestnuts.
  7. Mix thoroughly and leave to cool.
  8. Cut each puff pastry sheet in half lengthways to create 4 long strips.
  9. Brush the edges lightly with the plant-based milk.
  10. Divide the filling evenly between the pastry strips, running it along the centre and leaving a border around the edges.
  11. Fold the pastry over the filling and press firmly with a fork to seal.
  12. Repeat until all four rolls are assembled.
  13. Brush the tops with more plant-based milk and scatter with sesame seeds if using.
  14. Bake for 15–20 minutes, until golden brown and crisp.
  15. Allow to cool slightly before serving with mustard or ketchup, if liked.
