Puy Lentil Burgers with Tahini Salad

Packed with pulses, walnuts and warming spices, these homemade Puy Lentil burgers are served over a vibrant salad and finished with a creamy yoghurt tahini dressing. High in protein and full of flavour, it's a fresh and satisfying meal that's perfect for lunch or dinner.

Puy Lentil Burgers with Tahini Salad
Ingredients
  • ½ pouch Merchant Gourmet Puy Lentils
  • ½ medium red onion
  • 1 x 400g tin red kidney beans, drained and rinsed
  • 1 pouch Merchant Gourmet Smoky Black Beans
  • 50g walnuts
  • 50g porridge oats
  • 2 tsp smoked paprika
  • 1 tsp paprika
  • ½ tsp chilli powder
  • 1 tbsp tamari or soy sauce
  • 1 tbsp red wine vinegar
  • Salad
  • 180g mixed lettuce leaves
  • 200g cherry tomatoes, halved
  • 2 medium avocados, sliced
  • ½ medium red onion, finely chopped
  • 120–160g cheese of choice, cubed or grated
  • Yoghurt Tahini Dressing
  • 150g plain yoghurt
  • 50g tahini
  • 50ml water
  • 2 tsp fresh parsley, finely chopped
  • ¼ tsp garlic granules
  • 1 tsp sumac
  • Juice of 1 medium lemon

  1. Add the red onion and garlic to a food processor and blitz until finely chopped.
  2. Add the kidney beans, black beans, walnuts, oats, smoked paprika, paprika, chilli powder, tamari and red wine vinegar. Pulse until combined but still textured.
  3. Transfer the mixture to a bowl and stir through the Merchant Gourmet Puy Lentils.
  4. Divide the mixture into 6 equal portions and shape into burger patties.
  5. Place in the fridge to chill while preparing the salad and dressing.
  6. Combine the lettuce, tomatoes, avocado, red onion and cheese in a large serving bowl.
  7. To make the dressing, whisk together the yoghurt, tahini, water, parsley, garlic granules, sumac and lemon juice until smooth and creamy.
  8. Heat a non-stick frying pan over a medium-high heat and dry-fry the burgers for 5 minutes on each side until golden and heated through.
  9. Divide the salad between plates, top with the burgers and generously drizzle over the yoghurt tahini dressing.
