Creamy Mushroom Orzo

A rich and comforting orzo dish packed with fresh mushrooms and Mixed Mushrooms. Finished with crème fraîche, crispy mushrooms and plenty of Parmesan, it's full of savoury flavour and perfect for cooler evenings.

Creamy Mushroom Orzo
Ingredients
  • 1 pack Merchant Gourmet Mixed Mushrooms
  • 2 medium shallots, finely diced
  • 1 garlic clove, finely chopped
  • 1 pack speciality fresh mushrooms, divided
  • 150ml white wine (or extra vegetable stock)
  • 300ml vegetable stock
  • 200g orzo
  • 100g crème fraîche (or plant-based alternative)
  • Olive oil
  • Salt and black pepper
  • Crispy Mushroom Topping
  • ⅓ of the fresh mushrooms, finely shredded
  • Olive oil
  • Salt and black pepper
  • Fresh parsley, to serve
  • Parmesan, to serve
  1. Soak the Merchant Gourmet Mixed Mushrooms in 300ml hot water until rehydrated.
  2. Prepare the fresh mushrooms, tearing roughly two-thirds for the orzo and finely shredding the remaining third for the crispy topping.
  3. Heat a little olive oil in a wide-based pan over a medium-low heat. Add the shallots and cook until softened, then stir in the garlic.
  4. Pour in the white wine and reduce until most of the liquid has evaporated.
  5. Add the orzo and cook for 1–2 minutes, stirring regularly.
  6. Add the rehydrated mushrooms, their soaking liquid and the vegetable stock.
  7. Simmer uncovered for 5 minutes, then stir through the torn fresh mushrooms. Cover and cook for a further 5 minutes until the orzo is tender and has absorbed most of the liquid.
  8. Meanwhile, fry the shredded mushrooms in a little olive oil until crisp and golden. Season lightly.
  9. Stir the crème fraîche through the orzo and season to taste.
  10. Divide between bowls and top with the crispy mushrooms.
  11. Finish with parsley, grated Parmesan and a drizzle of extra virgin olive oil.
