Mini Chocolate Chestnut Cheesecakes

Rich, creamy and completely dairy-free, these mini cheesecakes layer a fudgy chestnut and oat base with silky chestnut date caramel, smooth chocolate cheesecake filling and a crisp chocolate topping. Perfect for festive entertaining or make-ahead desserts.

Mini Chocolate Chestnut Cheesecakes
Ingredients
  • Chocolate Chestnut Base
  • 150g oats
  • 100g Merchant Gourmet Whole Chestnuts
  • 100g almond butter
  • 140g maple syrup
  • Chestnut Date Caramel
  • 75g dates, pitted
  • 50g Merchant Gourmet Whole Chestnuts
  • 50g almond butter
  • 2–4 tbsp reserved date soaking water
  • Chocolate Cheesecake Filling
  • 250g vegan cream cheese
  • 50g almond butter
  • 25g maple syrup
  • Chocolate Topping
  • 200g dark chocolate, finely chopped
  • 12–14 Merchant Gourmet Whole Chestnuts, chopped
  • Pomegranate seeds, raspberries or other fruit, to decorate

  1. Soak the dates in boiling water for 10 minutes, then drain and reserve the soaking water.
  2. Line 12–14 muffin tin holes with strips of baking parchment to help lift out the cheesecakes later.
  3. Add the oats and Merchant Gourmet Whole Chestnuts to a food processor and blend until crumbly.
  4. Add the almond butter and maple syrup and blend again until the mixture becomes sticky and holds together.
  5. Divide between the muffin cases, pressing firmly into the base of each one. Chill in the fridge.
  6. For the caramel, blend the soaked dates, Merchant Gourmet Whole Chestnuts, almond butter and 2 tablespoons of the reserved date water until smooth. Add a little extra water if needed to achieve a creamy consistency.
  7. Spoon the caramel over the chilled bases, reserving a little for decoration if desired. Return to the fridge for around 1 hour.
  8. For the cheesecake layer, combine the vegan cream cheese, almond butter and maple syrup until completely smooth.
  9. Divide the cheesecake mixture evenly over the caramel layer and smooth the tops.
  10. Melt the dark chocolate and allow it to cool slightly.
  11. Spoon or spread the melted chocolate over the cheesecakes.
  12. Sprinkle with the chopped Merchant Gourmet Whole Chestnuts and fruit of choice.
  13. Freeze for 1–2 hours until firm.
  14. Carefully lift the cheesecakes from the tin using the parchment strips and serve.
  15. Store in the fridge for up to 1 week or freeze for up to 1 month.
