Puy Lentil & Mushroom Roast

A hearty plant-based roast packed with Puy Lentils, Whole Chestnuts, mushrooms and sweet potato. Rich in texture and flavour, it makes a delicious alternative to a traditional roast and pairs perfectly with all the classic trimmings.

Ingredients
  • 150g sweet potato, cubed and steamed
  • 2 tbsp olive oil
  • 250g portobello mushrooms (approximately 4), finely chopped
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 red pepper, finely chopped
  • 2 tbsp mixed dried herbs
  • 1 tsp cayenne pepper
  • Pinch sea salt
  • Pinch black pepper
  • 125g breadcrumbs
  • 1 pouch Merchant Gourmet Whole Chestnuts, blitzed
  • 1 pouch Merchant Gourmet Puy Lentils
  • Zest of 1 lemon

  1. Preheat the oven to 180°C and line a loaf tin, small pudding tins or a medium baking dish with baking parchment.
  2. Add the mushrooms to a food processor and pulse until finely chopped.
  3. Heat the olive oil in a large non-stick saucepan over a medium heat.
  4. Add the mushrooms and cook for 5 minutes, allowing excess moisture to evaporate and the mushrooms to brown.
  5. Stir in the onion, garlic, red pepper, mixed herbs, cayenne pepper, salt and black pepper.
  6. Cook for a further 5 minutes, stirring regularly.
  7. Add the steamed sweet potato and cook for another few minutes.
  8. Stir through the breadcrumbs, Merchant Gourmet Whole Chestnuts, Merchant Gourmet Puy Lentils and lemon zest.
  9. Remove from the heat and lightly mash the mixture, leaving some texture.
  10. Transfer to the prepared tin and press down firmly to compact the mixture.
  11. Bake on the lower oven shelf for 30 minutes.
  12. Remove from the oven and leave to rest for 10 minutes.
  13. Carefully turn out onto a serving platter and remove the baking parchment.
  14. Slice and serve with roast potatoes, vegetables and gravy if desired.
