Panko-Roasted Carrots & Puy Lentils

Finished with a silky citrus tahini drizzle and fresh thyme, it's a simple yet impressive lentil recipe that's perfect for easy weeknight dinners or relaxed weekend lunches.

Panko-Roasted Carrots & Puy Lentils
Ingredients
  • Panko-Roasted Carrots
  • 365g carrots, halved or quartered lengthways if large
  • 130g shallots, cut into wedges
  • 1½ tbsp olive oil
  • ½ tsp flaky sea salt
  • ½ tbsp maple syrup
  • 30–35g panko breadcrumbs
  • 1 tbsp olive oil
  • Citrus Puy Lentils
  • 1 tbsp olive oil
  • 1 pouch Merchant Gourmet French Puy Lentils
  • Zest of ¼–½ lemon
  • 1 tbsp lemon juice
  • ½ tsp maple syrup
  • 1 tsp fresh thyme, finely chopped
  • Sea salt and cracked black pepper
  • Tahini Drizzle
  • 2 tbsp tahini
  • Juice of ¼–½ lemon
  • 2–4 tbsp warm water
  • A pinch of sea salt

Puy Lentils
Puy Lentils
  1. Preheat the oven to 200°C fan.
  2. Place the carrots and shallots on a large baking tray. Drizzle with 1½ tbsp olive oil, season with the flaky sea salt and toss to coat. Roast for 20 minutes until tender and lightly caramelised.
  3. Meanwhile, whisk together the tahini, lemon juice, sea salt and enough warm water to create a smooth, pourable dressing. Set aside.
  4. Once the carrots are tender, toss them with the panko breadcrumbs, 1 tbsp olive oil and a pinch of salt. Return to the oven for 5 minutes until the breadcrumbs are golden and crisp.
  5. Drizzle the shallots with the maple syrup and toss gently to coat.
  6. While the vegetables finish roasting, heat the olive oil in a frying pan over a medium heat. Add the Merchant Gourmet French Puy Lentils, lemon zest, lemon juice, maple syrup and thyme. Season with sea salt and black pepper and cook for 2–3 minutes until warmed through and glossy.
  7. Spoon the lentils onto a serving platter and top with the panko-roasted carrots and sweet shallots.
  8. Drizzle over the tahini dressing and finish with fresh thyme sprigs and a little extra lemon zest, if liked.
