Smoky Spanish-Style Grains with Celeriac & Whipped Avocado

Golden celeriac, smoky Merchant Gourmet Spanish Style Grains and crisp kale come together in this vibrant grain bowl. Served over a silky whipped avocado crema and finished with peppery radishes, fresh thyme and a hint of chilli, it’s packed with rich textures and bold Mediterranean-inspired flavours.

Smoky Spanish-Style Grains with Celeriac & Whipped Avocado
Ingredients
  • Celeriac & Grains
  • 1 small celeriac (approx. 500g), peeled and cut into 2.5cm cubes
  • 2 tbsp extra virgin olive oil
  • Sea salt and black pepper
  • A few sprigs of fresh thyme
  • 80g kale, roughly chopped
  • 2 garlic cloves, crushed
  • 1 pouch Merchant Gourmet Spanish Style Grains
  • 6 radishes, finely sliced
  • Whipped Avocado
  • 2 avocados
  • ½ lemon, zest and juice
  • 4 tbsp vegan yogurt
  • A pinch of chilli flakes
  • Sea salt and black pepper
  • A pinch of chilli flakes, to serve
  1. Heat 2 tbsp olive oil in a large frying pan over a medium heat. Add the celeriac, season with sea salt and black pepper and cook for 12–15 minutes until golden and tender.
  2. Add the thyme sprigs and continue cooking for a few minutes, stirring occasionally, until the celeriac is evenly caramelised.
  3. Stir in the kale and garlic, then cook for 2–3 minutes until the kale has softened and started to crisp around the edges.
  4. Meanwhile, heat the Merchant Gourmet Spanish-Style Grains according to the pack instructions.
  5. Add the grains to the pan with the celeriac and kale, stir to combine, then remove from the heat and leave to cool slightly.
  6. To make the whipped avocado, add the avocados, lemon juice, vegan yogurt, a pinch of chilli flakes and a little sea salt and black pepper to a food processor. Blend until smooth and creamy.
  7. Fold the sliced radishes through the grain mixture.
  8. Spread the whipped avocado onto a serving platter or divide between two bowls. Spoon over the celeriac and grain mixture, then finish with the lemon zest and an extra pinch of chilli flakes.
