Spanish Style Paella

A speedy take on the Spanish classic, packed with colourful vegetables and Spanish Style Grains. Simmered with paprika, lemon and vegetable stock, this easy one-pan dish delivers all the warming flavours of paella in a fraction of the time.

Spanish Style Paella
Ingredients
  • 1 tbsp olive oil
  • 1 white onion, finely diced
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 1 large courgette, sliced
  • 150g peas
  • 1 tsp paprika
  • ½ tsp salt
  • 200ml vegetable stock
  • 2 pouches Merchant Gourmet Spanish-Style Grains
  • 1 lemon, juiced, plus wedges to serve
  • Small handful fresh parsley, chopped
  1. Heat the olive oil in a large frying pan or sauté pan over a medium heat.
  2. Add the onion and cook for a few minutes until softened and translucent.
  3. Stir in the red pepper, green pepper, courgette, peas, paprika and salt.
  4. Cook for 5 minutes, stirring regularly, until the vegetables begin to soften.
  5. Add the Merchant Gourmet Spanish Style Grains, vegetable stock and the juice of half the lemon.
  6. Simmer gently for 10 minutes, stirring occasionally, until the stock has reduced and the grains are heated through.
  7. Stir through most of the parsley.
  8. Divide between serving bowls and finish with the remaining parsley and lemon wedges.
