Speedy Spelt Risotto with Asparagus

This Wholegrain Spelt is the perfect ingredient to make this super speedy risotto for a midweek meal. It uses seasonal produce and full of the good stuff.

Ingredients

  • 1 Merchant Gourmet Wholegrain Spelt 
  • 1 onion, finely diced
  • 100-200ml vegetable stock
  • 20g grated pecorino cheese, or plant-based alternative
  • Fresh asparagus spears 
  • 1 tsp olive oil
  • Black pepper to taste

Instructions

  1. In a wide-based pan, slowly heat your olive oil over a medium heat. Once warm, add your diced onion and stir till they start to caramelise. 
  2. Add your Merchant Gourmet Wholegrain Spelt to the pan and stir well. 
  3. Gradually pour in the stock to the pan, alongside the grated cheese. Stir well for 5-10 minutes until the liquid starts to evaporate. 
  4. Blanche your asparagus tips in water for 2 minutes until aldente.
  5. Serve your spelt topped with asparagus and a sprinkling of black pepper.
