Spiced Veg Bake with Wild Rice

This colourful one-pot is packed with five different veg and fibre, making it super good for your gut. Pair with a fresh, cucumber and mint salad and thank us later.

Ingredients

  • 1 onion
  • 1 pepper
  • 1 butternut squash 
  • 1 cauliflower 
  • 1 tbsp curry powder 
  • 1 tin of chopped tomatoes
  • 1 pouch of Merchant Gourmet Brown, Red & Wild Wholegrain Rice 
  • 1 cucumber, halved, deseeded and thinly sliced
  • ½ bunch mint, roughly chopped

Instructions

  1. Preheat your oven to 180C.
  2. Roughly chop all the vegetables into chunks, then toss with oil and curry powder. Roast in a large baking tray for approx. 40 mins until soft and golden. 
  3. Add the chopped tomatoes and pouch of Merchant Gourmet Rice and return to the oven for 15 minutes.
  4. To make your cucumber and mint salad, combine the sliced cucumber and mint and season well.
  5. Remove the veg and rice from the oven. Mix well and serve with your cucumber and mint salad.

  • Um, sounds lovely but the ingredients list includes coconut milk, which is not mentioned in the method, but the method does include adding chopped tomatoes which are NOT in the ingredients list! Which are we meant to use?
