Sweet Potato, Puy Lentil & Peanut Stew

A rich and comforting stew packed with sweet potatoes, Puy Lentils and deep roast peanut butter. Finished with a vibrant coriander and lime dressing and served over fluffy quinoa, it's the perfect plant-packed meal for colder evenings.

Sweet Potato, Puy Lentil & Peanut Stew
Ingredients
  • 1 brown onion, finely chopped
  • 3cm piece ginger, finely grated
  • 5 garlic cloves, crushed
  • 1½ tbsp curry powder
  • ½ tbsp ground cumin
  • 3 tbsp tomato purée
  • 90g ManiLife Deep Roast Crunchy Peanut Butter
  • 1 x 400g tin chopped tomatoes
  • 2 large sweet potatoes, peeled and cut into small chunks
  • 1 pouch Merchant Gourmet Puy Lentils
  • 1 vegetable stock cube
  • Olive oil
  • Salt
  • Pinch sugar
  • 1 pouch Merchant Gourmet Red & White Quinoa, to serve
  • Coriander Lime Dressing
  • ½ small bunch coriander, roughly chopped
  • Zest and juice of 2 limes
  • 1cm piece ginger, finely grated
  • Splash olive oil

Puy Lentils
  1. Heat a generous drizzle of olive oil in a large saucepan over a medium heat.
  2. Add the onion and cook for 8–10 minutes until softened and lightly golden.
  3. Stir in the ginger, garlic, curry powder, cumin and tomato purée and cook for 3–4 minutes until darkened and fragrant.
  4. Add the peanut butter, chopped tomatoes, sweet potatoes, Merchant Gourmet Simply Cooked Puy Lentils and stock cube.
  5. Season with a generous pinch of salt and sugar.
  6. Pour in enough water to cover the ingredients and bring to the boil.
  7. Reduce the heat and simmer gently for 15–20 minutes, until the sweet potatoes are completely tender.
  8. Meanwhile, make the dressing by blending the coriander, lime zest and juice, ginger and a splash of olive oil until semi-smooth.
  9. Season the dressing with salt to taste.
  10. Heat the Merchant Gourmet Red & White Quinoa according to the packet instructions.
  11. Divide the quinoa between serving bowls.
  12. Ladle over the stew and finish with spoonfuls of the coriander lime dressing.
