Warm Winter Grain Salad with Crispy Kale & Feta

Our 5 Glorious Grains are tossed with crispy pancetta, caramelised leeks and shallots, roasted red peppers and crunchy kale in this hearty warm salad. Finished with feta, fresh herbs and a punchy guindilla dressing, it's packed with flavour and perfect for every season.

Ingredients
  • 2 packs Merchant Gourmet 5 Glorious Grains
  • 3 shallots, finely sliced
  • 1 leek, sliced
  • 1 bag kale, chopped
  • 1 pack pancetta cubes
  • 1 red pepper, sliced
  • 3 guindilla chillies, sliced
  • Handful fresh dill, chopped
  • Handful fresh parsley, chopped
  • 1 pack feta, crumbled
  • 3 tsp olive oil
  • Salt and black pepper
  • Guindilla Dressing
  • 2 tbsp olive oil
  • 1 tsp mustard
  • 1 tbsp lemon juice
  • 1 tsp guindilla chilli pickling liquid
  • ½ tsp sugar
  • Salt and black pepper

5 Glorious Grains
  1. Heat 1 teaspoon of the olive oil in a frying pan over a low heat. Add the shallots, leek and a pinch of salt and cook gently for 10–15 minutes until soft and caramelised. Set aside.
  2. Toss the kale with 1 teaspoon olive oil and a pinch of salt. Air fry at 180°C for around 5 minutes, shaking halfway through, until crisp.
  3. Toss the red pepper with the remaining teaspoon of olive oil and season with salt and pepper. Air fry at 200°C for 15–20 minutes, or roast in the oven until softened and lightly charred.
  4. Heat a dry frying pan over a medium heat and cook the pancetta for 5–6 minutes until golden and crisp.
  5. In a large serving bowl, whisk together the olive oil, mustard, lemon juice, guindilla liquid, sugar, salt and pepper.
  6. Add the Merchant Gourmet 5 Glorious Grains and toss to coat in the dressing.
  7. Add the caramelised shallots and leeks, crispy kale, roasted peppers, pancetta, guindilla chillies, dill and parsley. Toss gently to combine.
  8. Divide between plates and scatter over the crumbled feta.
  9. Finish with extra herbs and serve warm.
