Spanish grains with pan-fried paprika chicken and sticky-sweet honey halloumi bites, with a flavour-packed homemade sauce and finished with tangy yogurt.

Ingredients

  • 2 x chicken breast
  • 1 x Merchant Gourmet Spanish Grains
  • 1 x red pepper
  • 1 x red onion
  • 3 x garlic cloves
  • 10 x cherry tomatoes
  • 3 slices of halloumi (cubed)
  • 150ml chicken stock
  • 200g passata
  • Tender stem broccoli
  • Paprika
  • Oregano
  • Garlic granules
  • Honey
  • Lemon & Herb Yogurt

  • Squeeze of lemon juice
  • 2 tbsp of greek yogurt
  • Fresh chopped parsely
  • S&P

Instructions

  1. Roughly chop the red pepper, onion, cherry tomatoes and garlic. Add to a pan and cook for 6–7 minutes until charred and softened.
  2. Meanwhile, season the chicken with paprika, oregano, garlic granules, S&P, cook in a hot frying pan until golden and cooked through.
  3. Combine the yogurt ingredients and chill until ready to serve.
  4. Blend the softened vegetables with the chicken stock until smooth. Remove the chicken from the pan and add the blended sauce along with the passata. Season with paprika, S&P, then stir in the grains and simmer until warmed through.
  5. Soften the broccoli in hot water. Pan-fry the halloumi until golden, drizzling with honey at the end to create a sticky glaze.
  6. Plate the grains, top with sliced chicken, broccoli and honeyed halloumi. Garnish with parsley, a lemon slice and a spoon of yogurt.
