Ingredients
- 2 x chicken breast
- 1 x Merchant Gourmet Spanish Grains
- 1 x red pepper
- 1 x red onion
- 3 x garlic cloves
- 10 x cherry tomatoes
- 3 slices of halloumi (cubed)
- 150ml chicken stock
- 200g passata
- Tender stem broccoli
- Paprika
- Oregano
- Garlic granules
- Honey
- Squeeze of lemon juice
- 2 tbsp of greek yogurt
- Fresh chopped parsely
- S&P
Lemon & Herb Yogurt
Instructions
- Roughly chop the red pepper, onion, cherry tomatoes and garlic. Add to a pan and cook for 6–7 minutes until charred and softened.
- Meanwhile, season the chicken with paprika, oregano, garlic granules, S&P, cook in a hot frying pan until golden and cooked through.
- Combine the yogurt ingredients and chill until ready to serve.
- Blend the softened vegetables with the chicken stock until smooth. Remove the chicken from the pan and add the blended sauce along with the passata. Season with paprika, S&P, then stir in the grains and simmer until warmed through.
- Soften the broccoli in hot water. Pan-fry the halloumi until golden, drizzling with honey at the end to create a sticky glaze.
- Plate the grains, top with sliced chicken, broccoli and honeyed halloumi. Garnish with parsley, a lemon slice and a spoon of yogurt.
