Spring Grain Salad with Asparagus, Peas & Mint

A fresh and vibrant Glorious Grain salad packed with seasonal greens, crunchy veg and zesty lemon dressing. Made with asparagus, peas, radish, cucumber and mint, it’s light, healthy, and full of flavour – perfect for lunches, picnics or BBQs.

Ingredients

  • 125g asparagus
  • 100g radishes
  • 1 cucumber
  • 25g fresh mint
  • 100g frozen peas
  • 1 x 250g pouch of Glorious Grains 
  •  

    For the dressing:

  • 1 tsp wholegrain mustard
  • 1½ lemons
  • 1 tbsp honey
  • 5 tbsp olive oil

Instructions

  1. Bring a large pot of salted water to a boil. Blanch the asparagus for 1–2 minutes, then drain and rinse under cold water to stop the cooking process. Set aside.
  2. Heat the Glorious Grains following the instructions on the pack. Place the frozen peas in a microwave-safe bowl and heat on high for 2 minutes. Leave both to cool.
  3. Halve the cucumber lengthways and scoop out the seeds. Trim the tops and tails from the radishes.
  4. Roughly chop the asparagus, radishes, cucumber, and mint (saving a little mint for garnish) on a chopping board.
  5. Transfer the chopped veg and herbs into a large mixing bowl. Add in the Glorious Grains and peas.
  6. Whisk together the olive oil, mustard, honey, and lemon juice to make the dressing. Season with salt to taste and mix until well combined.
  7. Pour the dressing over the salad and toss everything together thoroughly. Finish with a sprinkle of sea salt and a few torn mint leaves. Serve and enjoy!
