Ingredients
- 1 sweet potato
- 1 pouch of Merchant Gourmet 3-Bean & Lentil Chilli
- Olive oil
- Handful of coriander, roughly chopped
- 1 spring onion, finely chopped
- 1 tbsp white wine vinegar
- A pinch of sugar
- A pinch of salt
- A generous drizzle of All Dressed Up Tahini & Lime Dressing
- A squeeze of lime to finish
Instructions
- Preheat your oven to 190-200 degrees. Then drizzle some olive oil and salt over your potato and place in the oven for 45 minutes.
- Pour your Merchant Gourmet 3-Bean Chilli into a saucepan, and warm through for a couple of mins.
- To make your herby salsa, roughly chop your coriander and spring onions. Place them into a bowl, and add a splash of white wine vinegar, pinch of sugar and squeeze of olive oil.
- Drizzle your sweet potato with some olive oil and salt. Lastly finish with a generous drizzle of the Tahini & Lime Dressing, and a squeeze of lime for an extra zesty finish!
